4 large Bell Peppers, cut into 1/2 inch strips
4 large plum tomatoes diced

1/4 tsp crushed Red Pepper, is sausages aren't spiced
1/3 cup packed fresh basil, chopped
1 Tbsp chopped mint or extra basil
1 to 3 tsp Balsamic Vinegar
Salt and Pepper to taste
Grated Parmesan or Romano to garnish

2 Cups coarse yellow Cornmeal

Here is how you make Corn Polenta with Sausage and Peppers:

Serves 6For sausage mixture:Heat oil in large skillet. Add onion and cook over medium heat until lightly browned, 10 to 15 minutes. Add garlic and cook another minutes. Squeeze sausages from casings and add to skillet. Break up sausage and cook until browned. Toss in the peppers and tomatoes. Bring to a boil. Reduce heat, cover, and simmer until peppers are tender, about 20 minutes.While peppers are simmering, prepare polenta. In a bowl combine cornmeal with 3 cups of cold water. In a heavy saucepan bring salt and 2 cups of water to a boil. Lower the heat slightly. Gradually stir in polenta mixture. Return to boil.Cook uncovered, adjusting heat so that the polenta simmers with big bubbles puffing up on the surface. As the mixtures thickens, use a wooden spoon to stir every few minutes taking care to scrape grains from sticking to the bottom. The polenta will be done when its thick and creamy, about 15 to 20 minutes.To serve: Stir the basil and mint into the peppers. Season to taste with vinegar, salt and pepper.
