8 uncooked lasagna noodles
cooking spray
2 cups jarred pasta sauce
1 16 oz container part-skim ricotta cheese
1/4 cup grated parmesan cheese
1 egg
1 T dried parsley
1/2 t garlic salt
1/4 t ground black pepper
1/2 lb pork Italian sausage
4 oz part-skim mozzarella cheese, shredded

Here is how you make Sausage Lasagna Roll-Ups:

Boil lasagna noodles according to package directions. Spray a casserole dish with cooking spray. Add 1/2 cup pasta sauce to bottom of casserole. Combine ricotta, parmesan, egg, parsley, garlic salt and pepper. Brown sausage, drain and crumble finely. Lay boiled noodle flat. Smear 1/8 of the cheese mixture down the length of the noodle. Sprinkle sausage evenly down length of the noodle. Roll noodle in a spiral. Place seam side down in casserole. Repeat with remaining 7 noodles. Spoon pasta sauce over the top of the rolls. Cover top of rolls with mozzarella cheese. Bake at 375 for 30 minutes or until hot and bubbly. Let rest 10 minutes before serving.Serving Size:?8 servings - 1 roll-up per serving
