9 oz box frozen, chopped spinach
32 oz fat free cottage cheese
16 portobello mushroom caps
1 7oz bag Reduced fat shredded mozzarella (2% milk)

Here is how you make Portobello Pizzas with sausage and peppers:

In a non-stick skillet, crumble and brown sausage, add onions and red pepper and continue cooking until soft. (Chop up and add the mushroom stems too) Add the garlic - cook for an additional minute. Let cool slightly.Thaw the spinach and squeeze out as much water as possible.Mix the spinach with the cottage until evenly distributed. Add the cooked sausage and vegetable mixture and mix well.NOTE: I do this part in advance and freeze the mixture in 1 cup portions in ziploc sandwich bags. It is not often that I need to make 16 pizzas all at one time.To assemble the pizzas:Preheat the oven to 400 degrees. Use a small spoon to scrape the black "gills" out from the mushroom caps. Line a rimmed baking sheet with parchment paper and place the mushroom caps on the sheet, stemmed side down. Cover with aluminum foil and bake until the mushroom caps are tender, about 10-15 minutes. Transfer the baked mushroom caps to paper towels so they can drain (lay them stemmed side down). They will release a lot of water.Flip the mushroom caps over to make a little "bowl" for you filling. Fill each cap with about 1/2 cup filling. (This is more than enough filling, they will be quite full.)Place on a baking sheet lined with a fresh sheet of parchment paper.Top with grated cheese (1/4 cup for each pair of caps) Bake until filling is warm and cheese is melted.Number of Servings: 16Recipe submitted by SparkPeople user CARAINBOSTON.
