1 box jumbo pasta shells
3 ears frozen corn (or equivalent in off the cob, I just happened to have on the cob in my freezer.)

Filling:
1 container low fat ricotta
4 slices whole mozzarella
3 TB shaved parmesan
1/2 package tofu (I used the tofu cubes - easier to deal with)
6 TB liquid egg whites
4 oz fat free cream cheese
3/4 cup shelled soybeans (can find in frozen aisle)
salt, pepper, garlic, and basil to taste

1 jar alfredo sauce (I used regular because it has slightly more protein, but use light if you are more concerned about fat grams)
1 jar marinara sauce

Topping:
2 roma tomatoes, diced
1/2 cup bread crumbs
3 slices provolone (I prefer no smoke flavor, but that's entirely up to you)
1/2 cup Italian blend cheese


How Do I Make Protein Packed Shells?

Here is how you make Protein Packed Shells:

Begin by cooking the corn and shells in separate pots. Cook 1-2 minutes under package directions as they will continue to cook in the oven. Preheat your oven to 350 degrees.In the meantime, mash together the first 7 filling ingredients. Add spices. I prefer the freeze dried garlic and basil, as they taste much fresher but don't go bad.Stir in the edamame and corn (drain corn, rinse with cold water to cool slightly and cut off cob with a sharp knife if you are using corn on the cob). Drain shells and rinse in cool water so they are cool enough to handle. Cover bottom of 9 x 13" pan with half jar of marinara. Spoon filling into shells and arrange into pan - they will be tightly packed. Cover with remaining 1.5 jars of sauce. Cook 20 minutes.Remove from oven, add topping, and return to oven for 10 minutes. Let cool 5-10 minutes before serving.Serving Size:?Makes 12 servings of about 3-4 shells each
