Red Ripe Tomatoes, 2 medium whole (2-3/5" dia)
Bay Leaf, 1 or 2 whole, (2 leafs)
Onion - Raw, chopped, 1 cup
Water, tap, 1 cup (8 fl oz)
Tomato Paste, 0.125 cup (1 1/2 tbsp)
Shrimp, cooked, 16 oz
Bakers and Chefs Fancy Cheddar Jack, 1 cup
Kraft 100% Parmesan Cheese, 14 tsp (35 g)
Salt, 1 tsp
Black calamata olives, 10 olives
Olive oil, 4 tbsp
Fresh Parsley chopped, 1/4 cup


How Do I Make Shrimp Risotto?

Here is how you make Shrimp Risotto:

Add water and olive oil to a medium pan in medium heat and heat it up. Stir in the garlic, finely chopped onion and parsley, the tomatoes cubed with skin and all, salt and the bay leafs. Let it cook for 5 minutes in medium/low heat stirring from time to time.Then add the cooked shrimp to the sauce and sauce let it cook for 10 more minutes.When done, pour into a tray to cook it again in the oven. Mix in the calamata olives pitted and chopped and cover it all with the fancy cheese and then the parmesan cheese.
