Dried Great Nothern Beans, .75 cup
Water, tap, 6 cup (8 fl oz)
Barilla MINI Farfalle, 4 oz
finely chopped Garlic, 3 clove
chopped Parsley, 4 tbsp
Baby Carrots, raw, 5 medium
thinnly sliced red onion, .25 cups
Olive Oil, 3 tbsp
Italian Seasoning 1-2 tbsp (according to taste)
Salt & Pepper to taste


How Do I Make White Bean Soup?

Here is how you make White Bean Soup:

Makes 4 servings-Rinse then soak beans overnight or for at least 6-8 hours.-Drain the soaked beans then place in a large pan/medium pot.-Add water, carrots and onion, bring to a boil, and then reduce the heat and allow beans to simmer partially covered for about 2 hours (or until the beans are tender).- Transer about 3/4 of the beans to a blender as well as the carrots, and a small amount of water from the pan (onions are ok too if they get mixed in), and process until a smooth puree.- Return puree to the pan, bring to a boil, then add noodles and reduce heat to a simmer for about 10 minutes or until noodles are tender.- While remainder of soup is cooking, place garlic in a pan with the oil, stirring constantly allow it to cook until slighly browned (3-4 minutes).- When Garlic is browned, mix in to soup as well as the parsley.- Add 1 tbsp of Italian seasoning and another tbsp of Ground black Pepper. Taste soup, and add more according to taste.Tips: Replace water with chicken broth is also an option. Try a reduced sodium broth or make your own so that it is salt free!Unless you add extra herbs & spices like the Italian Seasoning or pepper, it will taste rather bland, so be sure to taste test before serving it to guest! Mix different herbs to get what your taste buds want!I added Carrots more for the added color when pureed and also for the extra shot of vitamins, add more if you want more of an orange soup. With 5 carrots, it just gives it a hint of orange but is still mostly white.Serve with salad for a complete meal!When adding the noodles, I like to add a light meat.
