1 14-1/2 oz can Hunt's diced tomatoes w/celery, green peppers & onions

Here is how you make Spinach, Pasta and Oyster Mushroom Soup:

Pour chicken broth into stock pot over medium heat and let it come to a simmer. Meanwhile, cook the spinach according to the package instructions. (I microwave it.)While the spinach is cooking and the broth is heating up, remove any hard stems from the oyster mushrooms, tear or chop them into rough bits and add them to broth.Add the diced tomatoes and the cooked spinach to the broth and let it simmer 20 minutes or until the mushrooms are soft.Now you can add the agnolotti (or other refrigerated pasta such as ravioli or tortellini). Allow the soup to return to a simmer for 8-10 minutes or until the pasta is tender. NOTES: You can be flexible with this soup and substitute whatever you can find or what's on hand. For example, I love Buitoni Wild Mushroom Agnolotti in this recipe, but can't always find it--but cheese tortellini or ravioli would be almost as good. Also, if you can't find fresh oyster mushrooms, try shiitake or saute' some portobellos and toss them in instead; only use plain white mushrooms as e a last resort. You can be flexible with the diced tomato blend as well, as long as it isn't something overpowering.
