This soup is so hearty and flavorful, once you try it you will never go back to canned tomato soup. And best of all, it's fairly simple and quick to make. Try a bowl with one of my Rosemary Olive Knots and a side salad. (Note that you can also easily make this a vegetarian recipe by substituting vegetable broth for the chicken broth.) How Long Does Tuscan Tomato Soup Recipe Take To Cook?Tuscan Tomato Soup takes 45 minutes to cook. How Many Servings Does Tuscan Tomato Soup Recipe Make?Tuscan Tomato Soup makes 6 servings. What Are The Ingredients For Tuscan Tomato Soup Recipe? The ingredients for Tuscan Tomato Soup are: 2 tbsp unsalted butter1 small, sweet yellow onion, chopped 2 large carrots, peeled and sliced 1/2 cup red wine (I recommend a robust, full-bodied wine such as a cabernet sauvignon) 2 cloves garlic, minced 1 large (28 oz.) can crushed tomatoes 4 cups low sodium chicken broth 1 can cannellini beans, drained and rinsed 1/2 tsp red pepper flakes 1 bay leaf 1 sprig of rosemary Salt and pepper to taste How Do I Make Tuscan Tomato Soup? Here is how you make Tuscan Tomato Soup: Melt the butter over medium heat in a large pot. Saute the onion and carrots with a pinch of salt for about 5 minutes, until the onions are transparent. Add the wine and continue to cook until the wine has reduced down to almost nothing and the carrots are tender.Add the garlic, tomatoes, chicken broth, cannellini beans, and red pepper flakes. Stir well. Add 1 bay leaf and 1 whole sprig of rosemary. Cover the pot and simmer for 30 minutes.Remove from heat and take out the bay leaf and rosemary sprig. Pour the soup into a blender and puree until completely smooth. Serve immediately. Makes 6 1-cup servings.I recently watched an episode of Everyday Italian where Giada made a similar tomato soup but added a cool, creamy topping for it made from a base of creme fraiche. I think this soup is so flavorful that it doesn't necessarily need the topping, and creme fraiche is too heavy in fat and calories for my taste. However I came up with a low-fat version that adds a nice herby, cool contrast to the soup should you wish to try it. Simply mix together 1/3 cup light cream cheese, 1/3 cup fat free sour cream, the zest of 1 lemon and 1 tbsp chopped fresh rosemary. Serve the soup with a dollop of the lemon-herb cream on top for an additional splash of flavor. Note that this is optional and is not included in the nutritional breakdown of the soup.Number of Servings: 6Recipe submitted by SparkPeople user COPPERHEAD71.What's The Nutritional Info For Tuscan Tomato Soup? The nutritional information for Tuscan Tomato Soup is:
