1 can condensed tomato soup
1 carton (32 fl oz) organic vegetable broth
3 large carrots, chopped
2 large celery stalks, chopped
1 baby zucchini, chopped
2 cloves garlic, minced
2 small russet potatoes, chopped
1 1/4 cups drained, rinsed white beans
3/4 cup drained, rinsed red kidney beans
3/4 cup drained, rinsed green beans
Chopped fresh parsley to taste
Salt and Pepper to taste
Basil, oregano, rosemary, and thyme to taste
Approx 2 cups uncooked pasta (rotini or mini shells works best)

Here is how you make Homemade Vegetable Soup:

Vegetable Prep: Chop carrots, celery, and potatoes into bite sized pieces. Open cans of white and red kidney beans and green beans, drain and rinse in a strainer. In soup pot, quickly cook 2 cloves minced garlic, turn off heat and remove from burner.For the broth: In a blender, combine one can of tomato soup with one can full of water, one 14.5 fl oz can of diced tomatoes. Pour into soup pot with second can of diced tomatoes and the carton of vegetable broth. For the soup: Add the vegetables and spices to the broth, and bring to a boil, then reduce to a simmer for about an hour, up to an hour and a half, and then add uncooked pasta to the soup, simmer for another 15 minutes or so until pasta is cooked.
