.5 lb. of lean ground turkey
1 medium yellow onion
1 cup finely chopped or grated carrots
1 large zucchini finely chopped or grated
1 cup of chopped brown mushrooms
3-4 cloves of garlic minced (more or less if you like)
1 can of Tuscano Marinara Sauce (Trader Joe's)
1 can tomato paste
italian seasoning
fresh basil
.5 cup white wine
.5 cup 1% milk
1/2 package of whole wheat spaghetti pasta
1 T. balsamic vineger
salt and pepper to taste


How Do I Make Spaghetti (with hidden veggies! Shhh!)?

Here is how you make Spaghetti (with hidden veggies! Shhh!):

Makes 6 servings. Cook the spaghetti noodles according to the package directions. Brown the ground turkey in a large pan. (You may need some non-stick spray if your turkey is extra lean) Chop all of the vegetables and add them to your browned turkey. Cook until veggies are cooked through. Stir in the garlic, basil and italian herbs. Add the white wine and deglaze the pan with it. Let the wine cook off. Add the milk and let the milk cook off being careful not to scald the milk. Add the marinara sauce and tomato paste. Check seasonings to make sure you have enough salt and pepper. Finish the sauce with the balsamic vinegar.
