Here is how you make Sausage, Crimini and Spinach Frittata:

Pre-heat oven to 350.In a medium bowl, combine eggs, milk, salt and pepper. Beat well, until uniform in color.Use cooking spray on 10-inch frying pan, and set over medium heat. When pan is hot, add turkey sausage and brown slightly. Add mushrooms and cook until tender, then add spinach. When spinach is wilted, shake pan lightly to spread mixture evenly on the bottom of the pan, and pour over the egg mixture, and give it one more little shake to get everything well-acquainted.Cover and cook over medium until top is close to set.Sprinkle or lay slices of your favorite cheese over the top, and pop into the oven for 5 minutes, or until cheese is melted and slightly bubbly. Watch it closely after 5 minutes.Remove from oven, and wait just long enough for cheese to stay put when sliced.
