1 small summer squash
1 small eggplant

1 small Spanish onion

How Do I Make Stuffed Radicchio?

Here is how you make Stuffed Radicchio:

Directions:1- Cook ground meat in olive oil and drain- set aside2- Rough chop eggplant, squash and zucchini small but not diced- set aside 3- Put tomatoes, garlic, onion and spices in a food processor. Pulse until ground but not totally liquid4- In the skillet that was used for the meat , mix meat and eggplant and tomato mixtures together and heat together, 10 minutes or less if you want a garden fresh taste.5- Separate radicchio leaves6- Fill the radicchio and seal with a toothpick. This may be cooked again or not. I’ve done this with all white meat ground poultry or lean home-ground pork to keep the calories low. I’ve also done it with Italian sausage when not concerned about calories. Vegans just remove the meat since there's no by products it's totally vegan.
