Prepare noodles according to package directions. Brown turkey sausage, drain and cool. Combine tomato sauce, paste, and diced tomatoes, sausage, and Italian seasoning, onions and bell pepper in medium saute pan and heat till bubbly. Set aside. In another bowl, combine cottage cheese, egg, Mozzarela, Parmasian and parsley and mix until combined.Spray 13x9 in. pan with olive oil. Lightly layer bottom with tomato mixture and place 3 noodles on top. Layer with 1 cup tomato mixture, then 1 cup cottage cheese mixture. Repeat layers, distribute remaining tomato sauce on top. Cover and bake in 375 oven for 30 minutes or until hot and bubbly. Sprinkle with Mozzarella and bake uncovered for another 5 min until cheese is melted.
