Cook on medium high heat until vegetables are all tender. Add tomato paste, tomato sauce, and diced tomatoes. Lower heat to low and cover then simmer for 30 minutes. Empty ricotta into a mixing bowl. Add 1/4 cup egg beaters and 1 tbsp Italian seasoning to ricotta and mix well. Preheat oven to 425F. Spray glass pan with Pam spray then put a little sauce in the pan. Layer noodles, ricotta mixture, sauce and cheese until pan full making sure cheese is your top layer.
