20 oz Ground Turkey breast (I use Foster Farms)
30 oz Tomato Sauce, no salt added
6 oz Tomato Paste, no salt added
3 c Roma tomatoes, chopped
4 c crimini mushrooms, sliced
1/4 c black olives, chopped
1/4 c shallot, minced
4 cloves garlic, minced
1/4 cup dry white wine (or low-sodium chicken stock)
8 oz low-fat mozzarella, shredded (I used Weight Watchers brand)
8 oz low-fat ricotta (I used Precious brand)
2 oz parmesan, shredded
1/2 c Italian flat-leaf Parsley, chopped (a good handful)
seasonings to taste:
black pepper
rosemary
sage
thyme
marjoram
oregano
basil

Here is how you make Jayelle's Turkey Lasagne:

Preheat oven: 350 degreesCook lasagne noodles according to package directions until almost done.In a large skillet: brown sausage (remove casing if using links) in pan with ground turkey, drain. Spray pan with cooking spray, add shallot & garlic to pan and saute until shallot has softened, about 3-5 minutes. Add mushrooms and saute until cooked, another 3-5 minutes. Deglaze pan with white wine or chicken stock, reduce until almost dry. Add meat back to pan and add chopped tomato. Combine tomato sauce and tomato paste in a bowl, and mix together until smooth, add to meat mixture in pan. Add seasonings to taste and simmer on low heat, slightly uncovered, about 15 minutes. Add olives and parsley.Mix ricotta and mozzarella cheese together in a separate bowl.In a large baking dish layer 4 noodles, sauce mixture and 1/2 cheese mixture. Repeat, and top with parmesan. Cover with foil. Bake about 30 minutes until heated through.
