2 28-oz cans diced tomatoes, low sodium
1 can tomato paste
1-2 cups water
1/4 t pepper
1/2 t nutmeg
1/2 t allspice
1 T oregano
1 T basil
1 T ground fennel
1 packet Splenda (you can use 1 T sugar)
1/2 C chopped parsley
1/2 C grated parmesan cheese (the real stuff)
10 links lean hot Italian sausage

Here is how you make Lynn's Cheesy Marinara with Sauce w/Turkey Sausage:

Cook sausage any way you like: take out of the casings and pan fry, pan fry whole and then halve (what I do), or bake/roast in the oven. If frying, add a small amount of oil (1 t) if needed. Drain on paper towels. Saute onions and garlic in olive oil til tender. Add the tomatoes, paste, spices and water. Water depends on how long you plan to cook this. Optimally it's 2 cups of water for 3 hours of a bare simmer. For 1 hour, use 1/2-1 cup water. In the last half hour of cooking, add parsley, sausage and grated cheese. Stir frequently at first so cheese doesn't stick to bottom of pot and burn. This sauce is meant to reduce and become very thick.
