1 - 12 oz. package of Gimmie Lean or any other vegetarian sausage
3-4 c. fresh chopped kale, removed from stalk
1 can fat-free evaporated milk
32 oz. vegetable broth
3-4 cloves chopped garlic
1/2 cup celery, chopped
1/2 cup white or yellow onion onion, diced
1 tbsp. extra virgin olive oil olive oil
3-4 cups size B red potatoes gold sliced about 1/4 inch thick
ground black pepper
ground red pepper
bay leaves
other italian seasons to taste such as thyme, oregano, basil etc. (I like to use my italian 5-spice blend)


3-4 c. fresh chopped kale, removed from stalk


How Do I Make Vegetarian Kale and Poatato Zupa?

Here is how you make Vegetarian Kale and Poatato Zupa:

Chop and cook sausage. set aside. In a dutch oven Sautee veggies and garlic and a dash of black pepper in the EVOO. When soft add the vegetable broth and bring to a boil. Add the potatoes and spices. Allow to boil (but not a rolling boil or potatoes will fall apart) and cover until the potatoes begin to soften (about 10-15 min.) Reduce to simmer and add evaporated milk. Remove Bay leaves. Allow to come to a boil again for just a few more minutes and then add the kale and cook for about 3 more minutes. Serve and enjoy!Number of Servings: 8Recipe submitted by SparkPeople user SHEENUH.
