1 can 14.5 oz Del Monte Diced New Potatoes
1 can 14.5 oz Del Monte Petite Cut Diced Tomatoes
1 can 16 oz Bushs Garbanzos (Chickpeas)
1/2 package of Green Giant Frozen Spinach No Sauce (does not have to be thawed but separated in half-you are only using half the package in this recipe)
1/2 cup Pompeian sherry cooking wine
1 T diced fresh basil leaves-approx 5 leaves
2 T Olive Oil
1/2 cup diced onions
1/2 cup diced celery
1/2 cup Matchstick Carrots (or dice your own)
1/2 cup diced zucchini
3/4 t dried Oregano
1/2 t Salt
1/4 t black pepper
1 T Better that Boullion vegtable broth concentrate
1 packet Trader Joes Vegetable Savory Broth
1 and 1/2 cloves minced Garlic
3 c water
Shredded parmesan cheese (not calculated in calorie count)


How Do I Make Deb's Vegetarian Minestrone?

Here is how you make Deb's Vegetarian Minestrone:

**Do not let the number of ingredients scare you!! It is worth it!Drain and rinse garbanzos and potatoes. Chop vegetables. Saute garlic for 2 minutes; add onion and saute for another 3-4 minutes. Add celery and carrots, and sautee for another 2-3 minutes.Add broth, water and tomatoes; bring to a boil, stirring frequently. Reduce to medium heat. Add red wine, garbanzos, potatoes, spinach, oregano, basil, salt and pepper. Simmer at least 30 minutes and as much as one hour+ (the longer the better). When serving, top each bowl with 2 t of shredded parmesan cheese and enjoy with a side of crusty bread or a fresh salad! NOTE: You can certainly add your own version of broth rather than mine. It should be equivalent to 3 cups, and then you would delete the 2 broths and water from the recipe. Raw spinach can also be used instead of the frozen variety.Do not skip the sherry cooking wine if at all possible; it gives the soup such a nice richness.
