This is reduced fat, reduced calorie version of my favorite soup from the Olive Garden, Zuppa Toscana! It's a hearty, spicy, creamy soup with sausage, potatoes and kale. By using lean turkey sausage, skipping the heavy cream, and making sure to add tons of kale, the calories are slashed without losing the flavor. All ingredients are approximations and guidelines, and can easily be increased or reduced to your preference. I also usually add some seasonings, like fresh or dried herbs or red pepper for extra spice, but these are optional, since the sausage is usually already seasoned. Please feel free to give suggestions for improvement!

1 pound lean hot Italian turkey sausage, bulk or with casings removed
1 medium yellow or white onion
1-2 cloves garlic
4-5 medium russet potatoes
1 cup nonfat milk
6 cups water
3-4 cubes chicken bouillon
2 tablespoons whole wheat flour
0.25 cup grated parmesan cheese
3-4 cups kale, chopped


How Do I Make Healthier Zuppa Toscana?

Here is how you make Healthier Zuppa Toscana:

Saute finely chopped onion and minced garlic in a large stockpot on medium-high heat until very lightly browned. Add sausage (casings removed) and seasonings, if desired, and break apart with a spatula while cooking. When sausage is generally cooked through, add diced potatoes, 6 cups water and chicken bouillon. Chicken or vegetable stock is fine too, bouillon cubes are just convenient. Allow to simmer approximately 20-30 minutes until potatoes are cooked. Add milk and flour and stir quickly to avoid clumping. Continue simmering, about 20 minutes, and the liquid will start to thicken slightly. Turn off heat and stir in parmesan cheese and chopped kale. The residual heat will turn the kale very bright green when it is ready. Upon cooling, the soup will continue to thicken. This makes about 8 1-cup servings.
