Heat over medium high heat. While the stock is heating, dice the chicken breasts, trimming any fat away.When the stock reaches temperature, toss in the salt and pepper, and then the chicken. Cook for 10 minutes or until chicken is cooked through. Stir occasionally to keep the chicken pieces from sticking to each other.Peel and shred the carrots. Chop the celery and green onion, and finely chop the spinach.Once the chicken is cooked through, transfer the chicken pieces to a separate bowl and allow to cool for a few minutes.When the drained chicken has cooled down some, add the vegetables and toss.
