1 egg
2 tsp vanilla
1 tsp cinnamon
2-1/4 c spelt flour
1 tsp baking soda
1/2 tsp salt
1/3 c cocoa powder
2 c shredded zucchini, water squeezed out
1/2 c semi-sweet choc chips

Here is how you make Chocolate Zucchini cookies:

Preheat oven to 350. Cream butter & sugars. Add egg & vanilla & mix well. Combine dry ingredients & add in stages to creamed mixture. Stir in zucchini & choc chips. Drop onto greased baking sheet using a small ice cream scoop. Bake 8-10 minutes (depending on size of cookie). Let stand on baking sheet 5 mins before removing to a rack to cool.
