Preheat oven to 350F Line baking sheets with parchment paper. In large bowl, combine dry ingredients. In smaller bowl, combine wet ingredients and mix until blended. Add to dry ingredients and mix well. Add chocolate chips if desired. Drop by tablespoons onto cookie sheets. Or roll into 1" balls, then flatten with a fork, to make them look like peanut butter cookies. Bake 8-11 minutes until lightly golden. Cookies are fluffy on top when they come out.
