Place kangaroo, stock, onion, and spices in a saucepan over high heat. Bring to the boil. Reduce heat to medium-high and cook, covered with a tightly fitting lid, for 40 minutes, add apricots, prunes and beans and continue cooking for 20 - 30 min or until meat is cooked.
