Need an 8" quiche dish.Mash corned beef with the back of a fork.Place into quiche dish, and press down with the back of a spoon (The corned beef is instead of a pastry case) covering the whole of the base, and slightly up the sides.Place onion on top of corned beef.Break up brocolli into florets, and place on top of onions.Beat eggs, add pepper and salt to taste.Add cheddar cheese to eggs.Pour eggs over items in the quiche dish, covering the base as much as possible.Slice tomato and add to top of dish.Place in a medium hot oven - 150 degrees until the quiche is firm to the touch.Remove from oven, leave to cool slightly, cut into slices, and serve with salad or favourite vegetables.Number of Servings: 6Recipe submitted by SparkPeople user FREYALD.
