8 cups spelt flour

Here is how you make whole wheat bread:

4 1/2 warm water, 2/3 cup honey and oil, 2 T SAF yeast, 5 cups freshly milled flour, 1 egg and 1/4 cup flax meal. Measure into mixer and mix about 5 minutes. Let stand 20 minutes covered. After 20 minutes are up add 1 T salt, 2 T dough enhancer and 8 cups spelt flour. Add enough flour, 1 cup at a time, to make a sticky, but not stiff, dough. Mix until gluten is developed which is a smooth texture that stretches like bubble gum. Preheat oven to 200 for 5 minutes only. Divide the dough into 5 loaves, or shape into rolls, cinnamon rolls or pizza crust. Place in oven and let rise for 20 minutes or until doubled. Bake at 350 for 30-35 minutes or until golden brown. Remove from pans onto cooling racks. Tip: Bake 2 loaves at a time as this will improve the even baking of the bread. Also, as you are shaping your bread to put into loaf pan, make sure to oil hands very well, as dough will be rather sticky!
