Empty rinsed beans into a bowl & cover with 2 cups of water. Allow to soak for approximately 4 hours. An alternative to soaking is to prepare them in a pressure cooker.When the dal is ready, heat the coconut oil in a 2-3 quart sauce pot. Add onion & saute until translucent. Add in your Masala powder, curry leaves, chili pepper & salt & continue to saute for another minute or 2. Add in the tomatoes & allow to simmer for approximately 5 minutes. Add in your Chana dal & water. Bring to a boil, then lower heat & allow to simmer for approximately 30 minutes, longer if you wish for a thicker sauce consistency. To know the dal is ready, it should have a smooth creamy consistency when taste tested.Serve with brown rice, or dosa.
