Place 4 slices of bread on work surface. Spread pesto evenly over bread; top each with slice of eggplant, slice of red pepper and 1/4 of the cheese. Top with remaining bread. Spread half of the butter over top of bread.Place sandwiches, buttered side down, two at a time, in non-stick skillet set over medium heat. Spread half of remaining butter over top of bread. Cook for about five minutes or until underside is golden and cheese has started to melt.
