Milk Reduced Fat Milk 2% Great Value ( 1 cup serving), 1.75 cups (1/4 divided)
*Kraft 2% Shredded Cheddar Cheese, 2 cup
Onions, raw, 1 large
Beans, black, 2 cup
Baby Spinach (raw), 2 cup
*Cumin (ground), 2 tsp
Pepper, red or cayenne, 2 tsp
Corn Starch, 2 Tbsp


How Do I Make Mexican Mac and Cheese?

Here is how you make Mexican Mac and Cheese:

Preheat oven to 375 and cook penne according to instrcutions on the box. In the meantime sautee up the chopped onions in a medium saucepan until soft. Add in 1.5 cups of milk and bring to a simmer. Mix in the corn starch with the remaining 1/4 cup of milk and add to the saucpan once it is simmering. Lower the heat and allow the sauce to thicken up and then add in the cottage cheese and spices. Once cottage cheese is melted add in the cheese. Strain the penne as well as the black beans and then mix in with the cheese sauce. Layer your 9x9 pan with half of the pasta then add the spinach as a layer on the top then finish off by adding the rest of the pasta and sauce. Place in the oven and cook until bubbly and thickened. Let cool and enjoy!!!
