Saute onion, garlic & tomatoes in Olive Oil until onion is soft. Add 1/2 c. water, salt & pepper. Then add rinsed and dried quinoa. Cover pan and simmer until quinoa absorbs all the liquid. Meanwhile, cook broccoli and drain well. When quinoa is done add milk and shredded cheese stirring until cheese is melted - stir in cooked broccoli and add additional salt & pepper or hot sauce if desired.
