Heat oil in large skillet on medium heat.Add the ginger, onions and garlic and cook, stirring for about 1 minute. Add the peppers and tomato paste and cook for afew minutes more. Add the chicken, cook and stir for about five minutes until chicken in white on the outside. Add the tomatoes and bring to a boil. Reduce heat and simmer for 25 minutes.
