1 lb. Ground Chicken Breast
1 - 15oz can SW Chili Beans 50% Less Sodium
1 cup Fresh Sweet Corn
1 cup Salsa--Pica de Gallo from Safeway or Krogers
2 Tbl Italian Seasoning
1 Tbl ground Cinnamon
2 tsp Black Pepper
2 Tbl Garlic
PAM Cooking Spray
2 Tbl Chili powder
2-1.2 Cup Water
1 - 15oz Can of Hunts 100% Natural Tomato Sauce


How Do I Make Quick n' Spicy Chicken Corn Chili?

Here is how you make Quick n' Spicy Chicken Corn Chili:

Open the can of beans and drain off 1/3rd fluid. In skillet, brown chicken over medium heat w/ a Tbl of water and PAM. While cooking, add 1/2 the pepper, 1/2 the chili powder, 1/2 the garlic, 1/2 the Italian seasoning. Chop up as cooking to small bits. While chicken is cooking, start with a room temperature deep pot or Dutch oven with a lid and add the chili beans, tomato sauce and 1.5 can of water, and the rest of the seasonings/herbs. Add cooked meat to beans and tomato sauce mixture as well as the rest of the water. Stir well. Bring to a boil for 5 minutes cover and reduce heat to simmer for 30 minutes.
