2-3 chicken breasts
salt, pepper, garlic powder, cumin

1/2 tbsp of olive oil
1 small to medium jalapeno pepper (finely chopped)
1/2 c. onion (chopped)
1 clove of garlic (minced)

1 can of Healthy Request Cream of Mushroom Soup (98% fat free, 45% less sodium)
1 can of diced green chiles
8 Tbsp of light sour cream

10 traditional size (small) corn tortillas
1/2 c. reduced fat shredded pepper jack cheese
1/2 c. part-skim shredded mozzarella cheese


How Do I Make Sour Cream and Green Chille Chicken Enchiladas?

Here is how you make Sour Cream and Green Chille Chicken Enchiladas:

Season both sides of chicken breast with salt, pepper, garlic powder, and cumin. Place in a pan (non-stick or spray) and cook on medium high heat until full cooked. Set aside chicken and let cool. Once cooled, shred the chicken. In a small skillet pour in olive oil. Add jalapeno, onion, minced garlic, salt and pepper. Saute until tender.In a mixing bowl, combine cream of mushroom soup, sour cream, green chiles. Once combined, set 1/2 of mixture aside in another bowl. Add your jalapeno/onion mixture and shredded chicken.Steam the tortillas for a few seconds to make them easier to work with. Then place the chicken mixture in the center of each tortilla. Roll and place in a (non stick or sprayed) baking dish seam side down. I prefer to use glass baking dishes.Once all tortillas have been rolled and placed in the baking dish, take the Sour Cream mixture you set aside and spread it evenly over the top of the enchiladas. Mix your mozzarella and pepper jack cheese and sprinkle over enchiladas.Bake at 350 for 15-20 minutes or until cheese is bubbly.
