Here is how you make Galanga Ginger Chicken:

Hardware you'll need:A chopping boardA chef's knifeA fine cheese or nut graterA wok or stir-fry panA slotted spoonA bowl or twoMeasuring cup or spoonsAnd of course, your good old-fashioned food scale.1) Chop your chicken breast into small to medium sized pieces. Set aside in a bowl.2) Grate your ginger, measure, and mix in with the chicken pieces. 3) Lightly moisten a cloth and gently wipe fungi, and place into the bowl with the other veggies. (If you purchase them dried, place them in cold water for a moment until they are moist again.)4) Slice your peppers and onions (be careful with that onion!), measure your amounts, and set aside.5) Heat your wok or stir-fry pan to medium-high. Place your oil in the pan and wait until it's heated.6) Stir-fry the peppers and onions first for a minute, then add your chicken and cook for up to 5 minutes to maintain that fresh crispness.7) Once chicken is fully cooked, removed from pan and serve. Makes one serving total.8) Optional - add a drop of chili oil or sauce for some extra spice.
