Bring the veggie stock to a boil, add in the box of rice/lentils and accompanying spice pack. Bring back to a boil, cover, and reduce heat. Set time for 30 minutes. If you have a leftover batch of the roasted veggies, and cooked chicken, you're set. If not, make the veggies and cook the chicken in the oven while the lentil pilaf cooks.Check on the pilaf after 30 min and see if the liquid is absorbed and the lentils are cooked enough to your taste- if needed, cook an additional 5-10 minutes. Then shut off heat and let the pilaf sit for five minutes. Then mix everything together and portion into four servings!
