8 oz boneless, skinless chicken breast
OR Tyson canned white chunk chicken in water
1 medium portobello mushroom (4 oz)
1 tbsp fresh rosemary (dried works as well)
1 tsp fresh thyme (dried works as well)
1 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
2 whole wheat focaccia buns (I prefer whole wheat french hoagies)
4 oz part-skim mozzarella cheese sliced thinly
1 large roma tomato, thinly sliced
2 small scallions, chopped
1/2 c fresh basil, thinly sliced into strips
2 tsp Oikos Greek Yogurt (divided)


How Do I Make Chicken and Portobello Focaccia?

Here is how you make Chicken and Portobello Focaccia:

1) Preheat oven to 400?F. Line a sheet pan with nonstick foil or use a glass baking pan. Slice chicken into 1/2-inch strips, across the grain, and place in a large bowl. Slice mushroom in slightly thinner strips and add to chicken. (Or used canned white chunk chicken in water. Drain & add to bowel) Sprinkle with rosemary & thyme (dried herbs work just as well, but fresh bring heavier flavor). In small bowl whisk olive oil & balsamic vin, then drizzle over chicken & mushroom mixture. Spread mixture out onto prepared pan, not allowing strips to touch (if using raw chicken). Roast for 15 minutes, stirring half way through. Remove from oven to cool slightly. While cooling, add scallions to mixture.2) Meanwhile Slice focaccia/wheat hoagie horizontally, creating top & bottom halves, and toast in a toaster or under a hot broiler for 1 minute. 3)To assemble, place toasted bread on plates. Place half of cheese on each bottom half, followed by half of chicken-portobello mixture. Divide tomato an basil slices between the two sandwiches.
