This is one of those lucky recipes that I stumbled upon trying to whip up something fast for my picky 3-year-old while using up ingredients I had laying around. I always seem to have 1/2 cup of shredded chicken or half a breast laying around, so I threw it in. I happened to have wheat tortilla that day, and also had a handful of bell pepper slices leftover, and whala! My son kept asking for it, and my husband has pronounced it the best thing I've ever made for him (he's the chef in the family, so I don't often wow him).I love it when my kid's taste buds and my diet needs come together! What Are The Ingredients For Sarah's Chicken Quesadillas Recipe?The ingredients for Sarah's Chicken Quesadillas are: Cooking Spray, olive oil or butter flavored4 whole wheat tortillas, medium (I get the 8" ones but the important thing is that they're small enough to lie flat on the bottom of your skillet or frying pan) 1/2 cup shredded chicken (can use chopped or diced, just smoosh with your fingers when you add it to the pan) 2 mini bell peppers, diced, or 1/4 cup of diced bell pepper (orange or yellow tastes best, but red works fine, too) 1 cup shredded cheese (I prefer the "Mexican" blend of cheddar and some white cheese like colby or mozzarella) salsa for dipping (optional) How Do I Make Sarah's Chicken Quesadillas?Here is how you make Sarah's Chicken Quesadillas: 1. Spray 1 second of cooking spray into a 9-inch skillet on medium heat. 2. After the pan is warm (a drop of water will sizzle if dropped on pan), lay one tortilla in bottom of the pan (it should lie flat on the bottom of the pan).3. Sprinkle shredded chicken around the tortilla in a single flat layer. Sprinkle in diced bell peppers. This step is very important. If your chicken is too chunky or you don't spread these indredients flat enough or use too much chicken or pepper so that there isn't space for the cheese to melt in between, the finished product won't hold together well, you will end up using more cheese (and therefore add fat to the dish that you may not want), and it won't taste as good. 4. Sprinke cheese over the chicken and peppers, making sure that it covers the whole tortilla out to the edges, leaving no more than 1 cm border without cheese around the edge of the tortilla (but try not to drop any cheese directly on the pan).5. Place another tortilla on top of the cheese and spray with cooking spray. Press the top to help the cheese melt faster and stick to the top tortilla. 6. Wait 1-2 minutes for cheese to melt a little, then flip the entire quesadilla, trying to keep the 2 tortillas lined up with each other the best you can.7. Cook for another minute or two then remove from pan and place on a hard, flat surface. Finished quesadilla will have crisp tortillas on the outside and melted cheese on the inside holding everything together. Mmmmm!8. Let sit for a couple of minutes for the cheese to set, then use a pizza cutter (or knife, in a pinch) to cut like a pizza into 6 wedges.9. Repeat for the remaining tortillas. Serve with salsa for dipping.
