Here is how you make pepper chicken and rice:

dice the onion, tomato and green pepper and start to sautee' them in a pan with the olive oil. After veggies are sauteed for a while add the chicken and cover with a lid. Let it SIMMER, not boil until the chicken is done. When chicken is done take it out. Leaving what used to be the veggies in the pan. the tomatoes will have nearly all turned to liquid by now. Add a little water to the pan and then the corn starch, mixing it until the sauce thickens. Add the poultry seasoning.
