Here is how you make Southwest Chicken, Veggies, and Rice:

In a large pan saute all the veggies about 3-5 mins. until onions are clear, add the salsa and chicken and mix well. Sprinkle the Taco seasoning mix in and stir. Let simmer 10-15 mins. Add one cup cooked brown rice (I use boil-in-a-bag minute rice and make it ahead of time.) Serve with a sprinkling of cheddar cheese on top.
