4 cup fresh red apples (Delicious, Macintosh, Honey Crisp, etc.), chopped
1/3 cup Pecan halves
2 cup Baby Spinach, fresh, 2 cup (remove)
6 Tbsp Ken?s Balsamic & Basil Vinaigrette
2 tspn Lemon Juice

Here is how you make Apple Cherry Craisin Chicken Salad:

Clean and trim chicken breast. Slice whole breasts through so they are less than half inch at thickess part. Sprinkle with 2 tbsp of Raspberry Basalmic Vinaigrette. loosely wrap in foil and bake 30 minutes on 375 F. Do not overcook or let chicken dry out. While chicken is baking, chop 4 - 6 red apples into cubes (I leave the skin on, giving the salad lots of color). Put into large salad bowl and toss with lemon juice. Set aside. Put 4 tbsp of vinaigrette into small bowl. whisk in maple syrup. When chicken is done, allow it to rest 10 mins, then pull or cut into bite size chunks. Toss chicken with apples, spinach, dried cherries, and craisins. Toss to coat with vinaigrette and syrup dressing.Refrigerate to serve cold. Add pecans and goat cheese when serving.
