2 tbsp olive oil
2 tbsp fresh lime juice
2 tbsp fresh mango, grated
1 tbsp low sodium soy sauce
2 tsp peeled fresh ginger, grated
4 (4-oz) skinless, boneless chicken breast halves
1 package of Dole's Spring Mix (or 8 cups salad greens)
1 cup diced mango


How Do I Make Chicken Salad with Mango?

Here is how you make Chicken Salad with Mango:

Combine olive oil, lime juice, grated mango, soy sauce and ginger in a small bowl. Place chicken breasts on a plate and spread 2 tablespoons of oil mixture over the breasts. Grill chicken breasts on medium to high heat in a pan. Grill 4 minutes per side or till chicken is done. Brush each side with a little mixture. When the chicken is done, slice crosswire and set on top of salad greens and diced mango. Drizzle the remaining mixture on top as dressing.
