1/4 cup raisins
1 Granny Smith apple peeled, sliced and chopped \1 1/2 Tbsp. Olive Oil

Serves 4Heat pan on medium heat; add oil. Sprinkle chicken pieces with 1/2 tsp. curry powder. Add to pan and saute until cooked through about 5-10 minutes.In a large bowl combine brown rice, onions, pepper, raisins and apple. Mix thoroughly.In a small bowl, whisk olive oil, lemon juice and remaining curry powder together. Add salt and pepper to taste.Add chicken to the rice mixture, add dressing and combine.
