Under 200 calories!!This is the way I've always made chicken salad. Occasionally depending on what's in the fridge I will add a chopped hard boiled egg and a chopped firm apple. That will obviously change the calories, but it adds a freshness that is awesome! You don't need salt because of the olives, but feel free to add any spices you like. The smaller they are, the easier they stay on the bread. Add, Mayo, relish, mustard and mix. Taste a small piece and add black pepper and parsley to taste. A small pinch of dried parsley is fine. Makes 4 - 5 oz servingsFeel free to add chopped apple, pecans, dried cranberries or chopped hard boiled egg. This will affect the calorie count but you can divide it into smaller servings. This makes a fair amount. Good for several lunches. Serve on bread, with crackers, or on a raw spinach salad.
