Here is how you make Vietnamese Chicken Salad:

1. Add the chicken to simmering water (to which I added about ? cup white wine, 4 or 5 rosemary sprigs, a few onion rings, some thyme sprigs, salt, pepper, and a crushed garlic clove) and poach until the meat is firm and the juices run clear when pierced with a knife tip (10-12 minutes). [Note: to poach, use a shallow pan with a lid. Liquid should just barely come to the top of the chicken.] Remove cooked chicken and thinly slice it lengthwise. Set aside.2. In a jar, shake together the chile paste, garlic, vinegar, lime juice, fish sauce, and peanut oil until well combined. Set aside.3.
