When aromatic add the sliced mushrooms and cook until mushrooms darken and shrink.To the pan add 1/2 a cup of Urad Dal (white split lentils) and 3 pints water.Simmer about half a hour until the lentils are cooked and the vegetables are very soft.While the soup is cooking shred the chicken meat and put to one side until needed.Optional - liquidise the broth base with a stick blender if a smooth soup is preferred.Add the stock cube and stir until disolved.
