Here is how you make Chicken/Shiitake Mushroom Soup:

Chop celery, onion and mushrooms(if using fresh, if not soak mushrooms in warmed chicken broth and then chop) into small pieces.Saute celery, onions and mushrooms (if using fresh mushrooms) using a little chicken broth to deglaze pan periodically, remove from pan when soft. Brown chicken pieces in pan again deglazing pan periodically. Add chicken broth and bring to a boil, add mushrooms, celery, onions and noodles and bring to a boil.
