If you don't have Miracle Rice on hand, you could substitute 1 cup orzo (not low carb), 1 cup of shredded spaghetti squash, or just leave it out. I highly recommend making your own chicken broth for this recipe -- the canned kind is super high in sodium and just doesn't taste as good. This recipe is calculated using canned broth, but the sodium count will decrease significantly if you make your own broth -- no need to add salt, there's plenty in the other ingredients!
