Microwave the bag of veggies in a safe container per package instructions; set aside. In a large cast iron skillet over medium heat, begin to dry cook the celery and onion. Add the olive oil and chicken; stir occasionally until chicken is lightly browned. Meanwhile, in a small bowl blend together the celery soup, milk, chives, black and red pepper. Add the soup mixture and the microwaved veggies into the chicken skillet; blend gently together. Bake in a 350 degree oven for 25 minutes.
