minced garlic 2 tsp
quinoa, uncooked, 1 cup
26 oz crushed or diced tomatoes
8 oz tomato sauce
1 cup water ( or more if needed)
1 8 oz can of black beans
1 1/2 cups sweet corn
2 tsp chili powder
1/2 tsp smoked paprika
sprinkle of cayenne pepper
salt and pepper to taste

Here is how you make High Protein Gluten Free Quinoa, Bean and Corn Chili:

cook garlic in oil in med. saucepan until brown and then add in garlic, paprika, chili powder, cayenne, salt and pepper. cook for 2 mins. Add crushed tomatoes, tomato sauce and water, add quinoa and bring to a boil. Simmer for 30 mins adding more water as needed. Taste and season as needed with salt, pepper and chili powder. Add corn and black beans, boil for 5 mins . Add water and/ or tomato sauce to reach desired consistency. can be served with sliced avocado or cilantro.
