This is Mom's original recipe but other adaptations can be easily made (such as turning this into Hawaiian hash or into a vegetarian chili).You can definitely add more vegetables or beans to this if you wish, which will make this go even further. You can add oregano and basil (about 2 tbsp or to taste) if you wish, but I did not include this in the recipe. Sometimes I like to add jalape?os or hot sauce to my own serving.Excellent for lunch! This meal keeps you full and highly energized (especially if you make it a complete meal by adding a side salad and possibly a very small whole wheat roll)!!! If you are serving this for others, you can put a very small amount of shredded mozzarella cheese on top to make it look really glamorous. Enjoy!
