*Vanilla Extract, 2 tsp
Granulated Sugar, .5 cup
*Coconut, sweetened, 4 cup
Oatmeal, 5 minute, 1/2 cup (can substitute with same amount of coconut if preferred)
*Flax Seed Meal (ground flax), 4 tbsp (1/4 cup)
Salt, .5 tsp

Here is how you make Chocolate Macaroons:

Melt chocolate squares in double boiler and set aside.Beat egg whites, sugars, vanilla, cocoa, salt together in medium to large size bowl. Add ground flax, coconut, oatmeal and cooled chocolate. Mix together well and chill in fridge for 30 minutes. Place teaspoon sized drops of mixture on cookie sheet lined with wax paper.
